LCH Spaces
There are many spaces that attempt to define colors in terms of lightness, chroma, and hue. They all have different tradeoffs and different problems (we didn't evolve to make things easy mathematically), but there are several that are generally pretty good. I will use Oklch, an "ok" LCH space. The creator demonstrates it here, if you want more details or to compare it against other spaces yourself. We'll call this good enough: it's what I've been using to make the above graphs, so if those felt pretty good to you then you can hopefully trust the math behind it.
Oklch has no clearly defined bound for chroma, and it's not perfect with color distances. But it's generally quite good at tasks like "convert this image to black and white", "saturate this image", or "make the image bluer" while being relatively simple. (It's also included in modern browsers, which is very convenient.)
